Night Swimming

We went night swimming tonight at Palmdale Oasis pool. It was so relaxing. It's $2.00 from 7:30-9:00 p.m. for lap swimming. Only a handful of people go.

I had a good time. Afterwards I felt so relaxed.

Some of us swam, while some others bobbed their heads in the water and lurked around. Not mentioning any names here.

Pure Butta

I couldn't sleep last night, so I ended up waking up at 4:30 a.m. and made these. I actually got the recipe from wowroses.blogspot.com, however, I then googled the name of the cookie and found the recipe at the Land O' Lakes website too. I have to admit, they were yummy and so buttery soft.

LEMON MELTAWAYS
These lemon-flavored cookies are so tender that they seem to melt in your mouth.

Preparation time: 45 min Baking time: 8 min
Yield: 4 dozen cookies
Cookie Ingredients:
1 1/4 cups all-purpose flour
3/4 cup LAND O LAKES® Butter, softened
1/2 cup cornstarch
1/3 cup powdered sugar
1 tablespoon lemon juice
1 teaspoon freshly grated lemon peel
Frosting Ingredients:
3/4 cup powdered sugar
1/4 cup LAND O LAKES® Butter, softened
1 teaspoon freshly grated lemon peel
1 teaspoon lemon juice
Combine all cookie ingredients in large bowl. Beat at low speed, scraping bowl often, until well mixed.Divide dough in half. Shape each half into 8x1-inch log. Wrap each in plastic food wrap. Refrigerate until firm (1 to 2 hours).Heat oven to 350°F. Cut each log into 1/4-inch slices with sharp knife. Place 2 inches apart onto ungreased cookie sheet. Bake for 8 to 12 minutes or until set. (Cookies will not brown.) Cool completely.
Combine all frosting ingredients in small bowl. Beat at medium speed, scraping bowl often, until fluffy. Frost cooled cookies.

The butter in this recipe should be softened, but not melted. For best results let butter stand at room temperature for 20 to 30 minutes before mixing the cookie dough. Or, cut the butter into chunks or pieces for easier mixing. Also, 3/4 cup butter equals 1 1/2 sticks of butter.
If the dough is dry and crumbly after beating, add 1 to 2 tablespoons cream or soft butter, adding 1 tablespoon at a time until dough forms.

Monster Mash

I went to Thursday Night on the square with David, Katie, Heather and Desiree tonight. It was really a lot of fun. The only gliche was when we first arrived and Desiree and I both, sporting thin, cheap flip flops, walked into a sticker bush. OUCH!

Of course, we had to stop at the fountain to take pictures. I tried to get David in too, but he wouldn't turn around long enough. He kept sticking his hands
into the fountain.

David wanted to hit the bounce house first. He talked to some kids in line and told a little girl he liked her necklace. She said she liked his shirt. It was a very adult and polite exchange.

After the bounce house, we walked around for a bit. David made a mask and claws for Monster Mash night. The parade started at 7:15. We got in line to make the masks, feet and claws.

Katie spotted a tree that she became fascinated with and couldn't wait to touch, rub and pet.

And then she saw herself in a window and fell in love.

We took a snow cone break but she realized random strangers had better ice cream than we did so she ditched us to beg for a creamy vanilla and chocolate swirl.

She soon settled for ours though. David had watermelon. Yummy.

He asked the recreation woman if she liked his mask. When she said she did, he gave her the "I LOVE YOU" sign.

He marched in the parade with all the other kids, roaring and screaming.

Love Remembers - Craig Morgan

I went to the concert last night at Marie Kerr Park with my sister, Becky. It was actually pretty fun. Craig has a lot of hits that I like, but didn't know he sung, such as "What I Like About Sunday", "I Thought I was Tough". It rained pretty hard for about 10 minutes of the concert, but that was actually pretty fun, standing in the grass, getting soaked, listening to good music. I had a really fun time.

4th of July -- Proud to be an American.....

This morning we got up early and took the kids to take 4th of July pictures. Katie was C-R-A-N-K-Y and David was in la la land. It was hard to get either one of them to actually look into the camera at all. It was still fun. Katie had a cute dress on and David was wearing a flag shirt. One thing I have noticed from these pictures is....I'm getting really fat and need to seriously get back to exercising.

David, on the other hand, is a handsome boy. Katie is beautiful and so are Heather and Desiree.
After the pictures we went to eat at Don Cuco's in Acton. Katie was still tired and cranky. David stuck his hands IN the beans for some unknown reason. The food was good though and I had fun being with the kids.
